Ingredients
- 4 firm ripe bananas
- 6 Tbsp butter
- 3/4 cup packed brown sugar

- 1/4 cup dark rum
- 2 Tbsp banana liqueur (optional)
- 1 tsp vanilla extract
- 1 pinch kosher salt
- 1 quart vanilla ice cream (for serving)

Directions
- Slice the bananas in half lengthwise, then crosswise — you want 16 chunky pieces.
- Melt the butter in a large skillet over medium heat.
- Stir in the brown sugar, cinnamon, and salt and cook 2 minutes, stirring, until bubbling and smooth.
- Add the bananas in a single layer and cook 2 minutes, turning once, until they start to caramelize at the edges.
- Warm the rum in a small pan or microwave — warm rum flames better and the alcohol cooks off cleaner.
- Take the skillet off the heat, pour in the warm rum and banana liqueur if using, and carefully ignite with a long lighter.
- Stand back.
- Return to the heat and let the flames die down naturally, about 30 seconds, then simmer 1 minute until the sauce thickens and coats a spoon.
- Stir in the vanilla.
- Scoop ice cream into bowls.
- Spoon the bananas and all that sauce over the ice cream and serve immediately — this is a show-off dessert, so bring it to the table still warm.
